(325 gram) : All Purpose Flour
(1/2 teaspoon) : Baking Powder
(1/2 teaspoon) : Baking Soda
(1tablespoon) : Oil
(375 gram) : Sugar
(2cups) : Chickpea
(a pinch) : Cream of tartar
(1/2 teaspoon) : Vanilla essence
(8) : Strawberries
(8) : Walnut
(1tablespoon) : Icing sugar
(5 cup) : Lukewarm water

Aquafaba Vanilla Sponge Cake

Vegans delight vanilla sponge cake is a healthy cake for all. Aquafaba is made with chicpea water. Whole wheat flour and all purpose flour together combined with aquafaba with less oil (1tablespoon) makes this healthy vegan cake.

1.Soak 2 cup of chickpea overnight by washing thrice and pressure cook in 5 cup of water for 20 minutes. Strain the water and keep it aside
2.This water is to be boiled for few minutes till a slimy consistency is formed.This is called aquafaba.
3. Whisk aquafaba after it cools down with a pinch of cream of tartar. Add 375 grams of sugar in three intervals of time. Do not add at once. Aquafaba may go runny.
4.Beat in electric beater tfor 15minutes till it becomes soft peaks.
5.Sift 325 gram of All purpose flour, 325 gram of whole wheat flour, 1/2 teaspoon of baking powder and 1/2 teaspoon of baking soda together.
6.Add all the dry ingredients to the aquafaba mixture by adding 1tablespoon of oil.
7.Mix everything with the help of spatula. Pour the batter in a greased tin.
8.Bake it for 30minutes in a preheated oven at 180 degree centigrade.
9.When it is done demould and cool it on a cooling rack. Garnish it with Sprinkle of icing sugar,strawberries and walnut.
10.Aquafaba vanilla sponge cake is ready for Vegans.

Soak chickpea overnight by washing thrice and pressure cook for 20 minutes and strain water and keep it aside.
Boil the water and keep it aside till it reduces in quantity. Slimy consistency is the aquafaba.
Let it cool. Whisk it with a pinch of cream of tartar till frothy.
Add sugar thrice in intervals. Do not add at once. Aquafaba may go runny.
Whisk till itform stiff peaks.
Add all the sifted dry ingredients to the wet mixture.
Add vanilla essence and pour into a well greased pan.
Preheat oven at 180 degree centigrade and bake for 30 minutes or till it's done.
Let it cool. Sprinkle icing sugar on top and garnish it with strawberries and walnut.
