Ingredients

(1 Cup) : Leftover Rice
(2 Medium) : Potatoes BOILED
(1/2 Cup) : Corn Par Boiled
(1/2 Cup) : Green Peas Par Boiled
(2 Tbspn) : Capsicum Finley Chopped
(2 Tbspn) : Red Onion Finely Chopped
(1 Tbspn) : Coriander Leaves Finely Chopped
(To Fry) : Oil
(1/2 TBSPN) : Ginger Paste
(1/2 TBSPN) : Garlic Paste
(1/2 TBSPN) : Green Chillies Finely Chopped / Crushed
(1/2 Tspn) : Black Pepper Freshly crushed / powdered
(To taste) : Salt
(1/2 Tspn) : Chaat Masala
(1/2 Tspn) : Lemon Juice
(1 TBSPN) : Mint Mayonnaise
(1 TBSPN) : KetchUp

Veg Fritters

Use of Leftover food (Rice) to transform it to a very unique VEG Fritters.

A nice use of left over RICE and some added ingredients

Steps

Grate boiled potato in a bowl. Add left over rice, green peas, corn, onion, capsicum to it.

Mix it well.

Add ginger garlic paste, green chilly paste, crushed black pepper, salt chat-masala, lemon juice and coriander leaves to it. Mix it well.

Make equal sized fritters from it.

Heat oil in a pan, put all fritters into pan and sauté them till golden brown both the sides.

Garnish all fritters with onion and tomato slices on the top of them, followed by a drop of mint mayonnaise and tomato catch up.
