Ingredients

(200 Gram) : Rice Soak for half hour and cook it with BayLeaf, Clove and salt into it.
(50 Grams) : Butter
(3 TBSPN) : Oil
(1/2 Bowl) : Cauliflower
(1/2 Bowl) : Potatoes
(1/2 Bowl) : Green Peas
(1 Bowl) : Onion slices
(1 Bowl) : Tomatoes Sliced
(2 Tspn) : Cumin Seeds
(2 Tspn) : Kasuri Methi
(To Taste) : Salt
(2 Tspn) : Kashmiri red chilli powder
(2 TBSPN) : Pav Bhaji Masala
(1 Tspn) : Ginger Paste
(1 Tspn) : Garlic Paste
(4 -5 Nos.) : Dry Red Chilly
(4 -5 Nos.) : Cloves of garlic
(1/2 Bowl) : Coriander Leaves Finely Chopped

For Spicy Red Chutney:>>>
=======================

Soak dry red chillies in a hot water for 10 minutes and keep it aside.
Transfer it in a mixture bowl; Add Garlic cloves, Red Chilly powder and 1 Table spoon of oil. Salt to taste.

Churn it into a smooth paste. SPICY HOT CHUTNEY IS READY. Keep it aside. You can store the leftover in an airtight container for a long time.

Veggie Base:>>>

Par boil all the veggies (Green Peas, Potato cubes, tiny cauliflower). Let it cool for a while.
Heat oil into a pan.
Add a spoon full of butter.
Add Cumin seeds and once it starts changing color, add kasuri methi into it. Immediately add onion slices and let them cook till PINK and not Brown.
Add 2 spoon full of the RED CHUTNEY (prepared in the first step) and ginger and garlic paste. Mix it well.
Add tomatoes slice now. Season it with 2 TBSPN of Pavbhaji masala, salt to taste, red chilly powder, and pinch of turmeric powder.
Mix it very gently.

Your Veggie base is ready.

Final Assembly:>>>

Heat butter in a pan, add a spoon full oil into it to prevent butter from over heating.
Add pinch of cumin seeds and kasuri methi.
Add the VEGGIE BASE (prepared in step 2). Mix it well.
Now Gently, add the cooked rice. and mix it very very carefully. Rice should not break nor it should be over stir... otherwise it will mess up the Rice.

Once mixed properly, garnish it with finely chopped coriander leaves.

Serve it hot with RAITA (mix veg curd), Home made curd and onion salad.
