Masala Cutting Chai Malai Marke; Tea Spice Panacotta
My husband's college friends were coming over for breakfast and they were meeting each other after there college reunion (5 years ago). I over-heard my hubby speaking to his friend on phone as how they would bunk classes and enjoy their masala chai malai marke and poha at Shankar-nagar chai tuppri. As I was browsing through the net i found many versions of this. My hubby and his friends were overjoyed to see chai-ki-kettly on the table and cutting chai glasses and a surprise smooth dessert in them. (I borrowed aluminium chai kettly from a chai wala for few hours, he knows me as he sees me daily cycling and crossing his shop. He was very happy to give it to me🤗🤗)
This recipe is my way of making this vegetarian dessert. I loved the amazing combination of spice mix which gave exactly the same taste as masala chai that we get in tappri's.
🧺 Ingredients
- 3 teaspoons Tea Powder
- 1 Star Anies
- 3-4 Black Pepper
- 2 Green cardamoms
- 1/2 inch piece Ginger
- piece Cinnamon Stick1 small
- 1/8 teaspoon Nutmeg Powder
- Water1/8 cup
- Milk3/4 cup
- 1 and 1/4 cups Fresh Cream
- Jaggery Powder1/4 cup
- 1 and 1/4 teaspoons Agar Agar powder
- 2 teaspoons Powdered Sugar
- 4 tablespoons Hot water
👨🍳 Method — step by step
In a cup add agar agar powder and powdered sugar and mix. Then add hot water and vigorously. Keep this aside. If this mixture thicken too much add tablespoons of hot water or milk.
In a pan add all the spices and water, bring this to a Boil.
Add milk and stir. Add cream and mix well. Switch off the flame as soon as you see bubbles forming on sides of the pan.
Add powdered jaggery and mix till it melts completely. Heat the mixture a little if required.
At this point you may strain and then add agar agar mixture.
But I mixed agar agar then strained so that any lumps, if present will be removed. But this process has to be done very fast as the mixture will start to thicken as soon as you add agar agar.
Heat the agar agar mixture till it melts and become translucent.
Add agar agar mixture in our Masala chai mixture and whisk properly.
Pour the mixture in pots and let them cool a little then refrigerate for 2-3 hours. I had purchased these glasses from a glass store in our city.
I covered with Aluminim foil and left in fridge overnight.
Serve chilled as after meal dessert. I served Masala chai panacotta as a breakfast, lightly sweet dessert with poha and chana sabji to remind my hubby and his friends of their golden days of college and chai tappri 💟💟
