Green Veggie RICE
Full of Green Veggies with the rare "GREEN GARLIC" for fresh flavors which makes rice so much different in taste...
🧺 Ingredients
- 200 Grams Rice (Soaked for 10 Minutes (Used Basamati))
- Spring Onion (Finely Chopped)1/4 Cup
- Green Peas (Par Boild)1/2 Cup
- Onions (Sliced)1 Medium
- Tindola ((IVY Gourd or Coccinia) Medium (chopped in slice))1/2 cup
- Potatoes (chopped in slice)1 medium
- Capsicum (chopped in slices)1/2 Cup
- Green chillies (Finely Chopped)1 Nos
- Cabbage (Finely Chopped)1/4 Cup
- Green Garlic (Finely Chopped)1/2 Cup
- 1 Inch Cinnamon Stick
- 1 tspn Cumin Seeds
- 3-5 Nos Cloves
- Bay Leaf1 Medium
- 1 Tspn Garam Masala
- To Taste Salt
- 2 TBSPN Oil
👨🍳 Method — step by step
In a boiling water, Cook soaked rice. Make sure it's not over cooked.
Drain all water and keep cooked rice aside.
Heat oil in a pan.
Add green chillies, Cumin seeds, clove, bay leaf, cinnamon stick and cook it for a while.
Add potatoes and boiled green peas with a pinch of salt. Cook it for a while with closed lid till potatoes are soften.
Add Chopped onion, Capsicum and mix well.
Let it cook for another 4 - 5 Minutes.
Season it with all dry spices.
Mix it well.
At last add spring onion and mix it again.
Add cooked rice to this mixture and mix it gently.
Use two spatulas to avoid breaking rice.
Add finely chopped green garlic (white) to it and mix it gently again.
Take a portion into a serving bowl.
Garnish it with Green garlic (Greens) and finely chopped coriander leaves.
